Alcalá scallops with green mojo sauce and lemon
At Taberna 7, we love exploring flavours steeped in history, which is why we wanted to pay tribute to a recipe that is as simple as it is delicious: Alcalá scallops with green mojo and lemon, a gem of Canarian cuisine with deep roots in Alcalá de Isora (Tenerife), the birthplace of the famous green mojo.
This recipe originated in a small fishing village in the south of Tenerife, where the volcanic coastline and the rough Atlantic provide seafood of exceptional quality. There, in the home kitchens of Alcalá de Isora, people began to prepare this dish using fresh grilled scallops —or ‘viejas’, as they are also known in the area— dressed with mojo verde, a traditional sauce made from coriander, garlic, oil, vinegar and a touch of cumin. The addition of a few drops of fresh lemon juice adds freshness, enhancing the flavour of the seafood without masking its essence.
Green mojo sauce has its origins in this volcanic soil, and although it is now popular throughout the Canary Islands, it was in this very corner of Tenerife that it first began to be made using traditional methods as an accompaniment to fish and seafood. Its vibrant flavour, with its herbaceous and tangy notes, pairs perfectly with the sweetness of freshly prepared scallops.
